Abstract: | El reciente auge de la cocina ecuatoriana y los esfuerzos de sus representantes por posicionarla en la palestra internacional han creado una variedad de ofertas para el mercado local e internacional. Sin embargo la gastronomía ecuatoriana se mantiene en una polarización entre lo informal y lo exclusivo, que va creando una brecha para el consumidor promedio o recurrente. Además, la poca planificación de la mayor parte de los establecimientos que la ofrecen, tampoco representan propuestas rentables o sostenibles. Como una solución para estos antecedentes, se plantea la necesidad de diseñar un plan de Negocios para crear un restaurante Street Food basado en cocina ecuatoriana con procedimientos adaptados a un modelo Quick Service en el Centro Norte de Quito. Para contextualizar y resaltar las ventajas de esta propuesta se exploran algunos de sus conceptos más importantes como: Quick Service, Street Food y Plan de Negocios; se exponen las necesidades operativas, financieras y administrativas del negocio, para finalmente analizar su viabilidad en base a información actual..The recent rise of Ecuadorian cuisine and the efforts of its promoters to place it in the international stage have created a variety of offers for the local and international market. However, Ecuadorian gastronomy remains polarized between the informal and the exclusive, which creates a gap for the average or recurring consumer. Furthermore, the poor planning of most of the establishments that offer it does not represent profitable or sustainable proposals either. As a solution to this background, the need to design a Business plan to create a Street Food restaurant based on Ecuadorian cuisine with procedures adapted to a Quick Service model in the North Center of Quito is arisen. To contextualize and highlight the advantages of this proposal, some of its most important concepts are explored, such as: Quick Service, Street Food and Business Plan; The operational, financial and administrative needs of the business are presented to finally analyze its viability based on current information.. |
