Abstract: La tesis plantea la creación de un sustituto cárnico funcional a base de cáscara de plátano (Musa paradisiaca), dirigido especialmente a personas vegetarianas. El estudio parte del creciente interés por una alimentación más saludable y sostenible, considerando el impacto ambiental de la producción animal y la necesidad de ofrecer opciones accesibles y nutritivas en dietas basadas en plantas. La cáscara de plátano, tradicionalmente considerada un residuo agroindustrial, posee un alto contenido de fibra, compuestos antioxidantes, minerales y vitaminas, lo que la convierte en un ingrediente funcional con potencial para ser aprovechado en la industria alimentaria...This thesis proposes the creation of a functional meat substitute based on banana peel (Musa paradisiaca), specifically aimed at vegetarians. The study stems from the growing interest in healthier and more sustainable eating, considering the environmental impact of animal production and the need to offer accessible and nutritious options in plant-based diets.
