Abstract

La evolución de la alta cocina contemporánea ha transformado el acto de comer en una experiencia multisensorial, donde la arquitectura, la narrativa espacial y la gastronomía se integran como un todo. En este contexto, el proyecto Yura Lab se plantea como un restaurante–laboratorio ubicado en la ciudad de Otavalo, Ecuador, que responde a la pérdida del vínculo entre el alimento, su origen y los procesos vivos que lo conforman.
