Presentando la cocina de Carmen Vargas

Abstract

A través de este proyecto quiero rendir un homenaje a mi abuelita, a su vida y a su comida. A lo largo de los años, mi abuelita Carmen ha preparado diversos platos que han marcado tanto mi vida como la de mi familia. Esta propuesta nace del deseo de rescatar y preservar las recetas ancestrales que se han transmitido de generación en generación; estas no solo representan una forma de alimentar el cuerpo, sino también una manera de nutrir el alma y fortalecer los lazos familiares. Mediante el uso de ingredientes frescos y locales, así como diversas técnicas tradicionales, este proyecto busca reflejar la autenticidad y la calidez de la comida de mi abuelita. Para poder realizar este proyecto fue necesario mucha investigación, ya que no solo abarca la historia de mi abuelita como la quiero contar, sino que nos cuenta acerca del origen de algunos de los ingredientes como el cuy que es una de las proteínas más representativas dentro del menú, o la papa que además de ser usada en muchos de los platos del menú, evoca un origen mucho más profundo e importante para Ecuador. En este trabajo de igual forma encontraremos cuales son las mejores bebidas para maridar cada uno de nuestros platos, una de las bebidas que más resalta dentro de mi proyecto y que es la que más aprecio es la bebida “Corazón de uvilla” una bebida fermentada a base de uvilla la cual es propia de mi autoría, esta bebida está pensada para maridar las croquetas del corazón, en cuanto al servicio se utilizara un servicio americano el cual está pensado para sacar los platos desde cocina y servirlos directo a la mesa. Cada uno de los platos de este proyecto están pensados para transmitir nostalgia a aquellos que lo prueben, además ayuda a comprender la importancia de la comida tradicional como patrimonio cultural ecuatoriano. Through this project, I want to pay tribute to my grandmother, her life, and her cooking. Over the years, my grandmother has prepared a variety of dishes that have deeply influenced on my life and that of my family. This proposal stems from the desire to rescue and preserve the ancestral recipes that have been passed down from generation to generation; these recipes not only represent a way to feed the body, but also a way to nourish the soul and strengthen family ties. Through the use of fresh, local ingredients and various traditional techniques, this project seeks to reflect the authenticity and warmth of my grandmother's food. To carry out this project, extensive research was required not only covers my grandmother's story as I want to tell, but also tells us about the origin of some of the ingredients, such as cuy, which is one of the most representative proteins on the menu, or potatoes, that used in many of the dishes on the menu, evoke a much deeper and more important origin for Ecuador. Also in this work research, we will find the best drinks to marinate each of our dishes, one of the drinks that stands out most in my project and that I appreciate the most is the drink “Corazón de uvilla” a fermented drink made from uvilla, which is my own creation. This drink is designed to marinate the heart croquettes, as for the service, I am going to use and American service, which is designed to take the dishes from the kitchen to the table. Each of the dishes in this project is designed to evoke nostalgia in those who try them, as well as to help them understand the importance of traditional Ecuadorian food and their cultural heritage.
