Oferta Gastronómica tradicional durante la Fiesta Religiosa de la Semana Santa en la parroquia rural de Calpi, cantón Riobamba, provincia de Chimborazo

Abstract

El presente trabajo se realizó en la parroquia rural de Calpi, del cantón Riobamba, lugar en donde la cocina y la religiosidad tienen una simbiosis particular de convivencia íntima, de la cual fluye todo tipo de expresiones culturales en varias fechas, pero en una, la Semana Santa, adquiere un intercambio singular en donde pareciera que no puede existir una sin la otra y en donde las memorias de la esencia calpeña, fluyen y se manifiestan intensamente. Al analizar las exhibiciones culinarias durante la Semana Mayor, sin lugar a dudas notamos que la parroquia mantiene vivas muchas de sus tradiciones milenarias, sin embargo, durante la recopilación de la información se pudo notar que muchas recetas, técnicas, prácticas, lugares, personajes e ingredientes se han perdido en el tiempo y se han olvidado, dejando un vacío en la idiosincrasia calpeña, evitando así, una propagación de saberes ancestrales, valiosos en temas de cultura, tradición, investigación e identidad... This work was conducted in the rural parish of Calpi, in the canton of Riobamba.
