Abstract

San Miguel de Bolívar es la cabecera cantonal de la provincia de Bolívar, cuenta con una extensión de 570.10 kilómetros cuadrados, con altitudes entre los 2400 a los 2600 metros sobre el nivel del mar. San Miguel de bolívar cuenta con un clima que puede variar entre los 7 hasta los 24°C, por lo cual las tierras de San miguel de Bolívar son ricas en muchos minerales que sirven para el cultivo. San Miguel de Bolívar tiene una población de 28.349 habitantes, San Miguel se divide en 7 parroquias de las cuales solo una es urbana, las demás son rurales. San Miguel de Bolívar tuvo su cantonización el 10 de enero de 1877 después de mucha perseverancia del pueblo sanmigueleño, destacando así la fuerza del pueblo san migueleño, los sanmigueleños cuentan con algunas festividades entre ellas está su carnaval, el cual es uno de los más famosos y tiene lugar en los meses de febrero y marzo, en estas festividades la gastronomía tiene un pie por delante y es de costumbre comer el famoso “chigüil” ya que es temporada de maíz. De igual la fiesta de su patrono el arcángel San miguel el cual se celebra del 24 al 29 de septiembre. San Miguel es un lugar mágico tanto por sus paisajes como por su gastronomía, lo interesante es ver como el sanmigueleño sigue guardando lo tradicional, las recetas no están escritas en un papel, van pasando de generación en generación, las costumbres arraigadas a la comida es un punto a destacar del sanmigueleño. Las historias, las vivencias hacen que san miguel sea un lugar que sigue guardando su esencia tradicional y a pesar del pasar de los años, los sanmigueleños siguen siendo orgullosos de su cantón, de sus tradiciones, costumbres y sobre todo de su comida.
