Menú de degustación basado en leyendas y cuentos de la sierra ecuatoriana

Abstract

La propuesta de este proyecto consiste en la creación de un menú de degustación basado en “Leyendas y cuentos del Ecuador”; tomando productos ecuatorianos y relacionándolo con las leyendas, aplicando diferentes técnicas. Los productos van agrupados según la provincia de origen de la leyenda. Este menú se basa en lo social cultural, la gran mayoría de ecuatorianos crecemos con leyendas y cuentos; esos relatos que venían de parte de nuestros abuelos en las noches cuando la luz fallaba y nos reuníamos junto a las velas para comer los relatos tenían presencia, emulando tantas emociones desde el miedo, felicidad e intriga. Las historias se han remontado de generación en generación, dado este paso de tiempo se convirtieron en algo cultural que se busca perdure por mucho tiempo más. Con el concepto de lo que perdurarán se busca emular un menú que mantenga esos recuerdos por las leyendas y cuentos más clásicos...The proposal of this project consists of the creation of a tasting menu based on "Legends and tales of Ecuador"; taking Ecuadorian products and relating it to the legends, applying different techniques.
