La obesidad es uno de los mayores retos de salud pública a nivel global. Esta enfermedad se caracteriza por la presencia de un estado de inflamación crónica de bajo grado que contribuye al desarrollo de otras enfermedades crónicas. Los tratamientos disponibles actualmente, presentan una serie de limitaciones que reducen su efectividad. En este contexto, se ha generado un interés por el estudio de compuestos bioactivos de origen vegetal por su potencial efecto antiinflamatorio.
