Instituto Gastronómico para el GAD de Rumiñahui

Abstract

La presente tesis se centra en el diseño y desarrollo de un Instituto Gastronómico para el Gobierno Autónomo Descentralizado (GAD) de Rumiñahui, en la ciudad de Sangoqui, con el objetivo de abordar la carencia de un espacio dedicado a la formación gastronómica. En un contexto donde la gastronomía local juega un papel fundamental en la identidad cultural y en el potencial turístico de la zona, la creación de un Instituto especializado se presenta como una oportunidad única para promover la excelencia culinaria, potenciar el talento local y contribuir al desarrollo sostenible de la comunidad. A través de un enfoque que combina el análisis de necesidades educativas, la exploración de conceptos teóricos clave y la consideración de aspectos urbanos y arquitectónicos relevantes, esta investigación se propone diseñar un espacio educativo y cultural que no solo satisfaga las demandas de formación en gastronomía, sino que también se convierta en un centro de referencia en el ámbito culinario. En una época donde el ritmo frenético de la modernidad a menudo borra nuestras raíces, es necesario reflexionar sobre la importancia que tiene la cultura en nuestras vidas y cómo podemos preservarla, ya que es considerada un pilar fundamental que define la identidad de la ciudad. Entre la modernidad y la tradición, Sangolquí, con su rica herencia cultural gastronómica, se enfrenta a un desafío trascendental tras la pérdida gradual de la misma. Sangolquí, hogar de aromas ancestrales, se encuentra en peligro de perder sus sabores auténticos. Este documento de arquitectura no solo aborda la estética de los espacios, sino que también examina la conexión entre la arquitectura y la disfusión de la cultura gastronómica. ¿Cómo debemos diseñar entornos que no solo sirvan como lugares de encuentro, sino que también sean guardianes de las tradiciones gastronómicas que definen la identidad de Sangolquí? The present thesis focuses on the design and development of a Gastronomic Institute for the Autonomous Decentralized Government (GAD) of Rumiñahui, in the city of Sangolquí, aiming to address the lack of a dedicated space for culinary training. In a context where local gastronomy plays a fundamental role in cultural identity and the tourism potential of the area, the creation of a specialized Institute presents a uniqueopportunity to promote culinary excellence, enhance local talent, and contribute to the sustainable development of the community. Through an approach that combines the analysis of educational needs, the exploration of key theoretical concepts, and the consideration of relevant urban and architectural aspects, this research aims to design an educational and cultural space that not only meets the demands for culinary training but also becomes a reference center in the culinary field.In an era where the frenetic pace of modernity often erases our roots, it is necessary to reflect on the importance of culture in our lives and how we can preserve it, as it is considered a fundamental pillar that defines the identity of the city. Between modernity and tradition, Sangolquí, with its rich cultural gastronomic heritage, faces a transcendental challenge after the gradual loss of it. Sangolquí, home to ancestral aromas, is in danger of losing its authentic flavors. This architectural document not only addresses the aesthetics of spaces but also examines the connection between architecture and the dissemination of gastronomic culture. How should we design environments that not only serve as meeting places but also as guardians of the gastronomic traditions that define Sangolquí’s identity?
